Tofu and Vegetable Stir-Fry Recipe

Ingredients

  • 14 oz block of extra-firm tofu
  • 2 cups of broccoli florets
  • 1 red bell pepper, sliced into strips
  • 1 cup of sliced carrots
  • 1 cup of snow peas
  • 3 tablespoons of soy sauce
  • 2 tablespoons of sesame oil
  • 1 tablespoon of freshly grated ginger
  • 2 cloves of garlic, minced
  • Vegetable oil for frying
  • Sesame seeds for garnish (optional)
  • Green onions, chopped for garnish (optional)

Instructions

Step 1: Press Tofu
Begin by pressing the tofu to remove excess moisture. Wrap the tofu in a clean kitchen towel and place a heavy object on top, such as a book or a skillet, for about 15-30 minutes.

Step 2: Prepare Tofu
Cut the pressed tofu into 1-inch cubes. In a bowl, gently toss tofu with 1 tablespoon of soy sauce and set aside to marinate for a few minutes.

Step 3: Prep Vegetables
While the tofu is marinating, wash and chop the broccoli, red bell pepper, carrots, and snow peas as required.

Step 4: Stir-Fry Tofu
Heat a wok or large non-stick skillet over medium-high heat and add a tablespoon of vegetable oil. Add the tofu cubes and stir-fry until all sides are golden brown, about 5-7 minutes. Remove tofu from the skillet and set aside.

Step 5: Stir-Fry Vegetables
In the same skillet, add another tablespoon of oil if needed. Add the garlic, ginger, and vegetables. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.

Step 6: Combine and Season
Return the tofu to the skillet with the vegetables. Pour in the remaining soy sauce and the sesame oil. Toss everything together to combine and heat through for another 1-2 minutes.

Step 7: Garnish and Serve
Garnish with sesame seeds and chopped green onions, if desired. Serve immediately with steamed rice or noodles.
