Homemade Strawberry Shortcake Recipe

Ingredients

  • 1 pound fresh strawberries, hulled and sliced
  • 1/4 cup white sugar, plus 2 tablespoons for shortcake
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, chilled and diced
  • 1 cup heavy cream, plus extra for brushing
  • 1 teaspoon vanilla extract
  • Whipped cream, for serving

Instructions

Step 1: Preheat the oven to 425 degrees Fahrenheit (220 degrees Celsius).
Step 2: In a mixing bowl, combine sliced strawberries with 1/4 cup sugar, and set aside to macerate.
Step 3: In another large bowl, whisk together flour, 2 tablespoons sugar, baking powder, and salt.
Step 4: Cut in the chilled butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
Step 5: Stir in 1 cup heavy cream and vanilla extract just until the dough starts to come together.
Step 6: Turn dough out onto a floured surface and gently knead just until it comes together.
Step 7: Pat dough into a 1-inch thick round and use a biscuit cutter to cut out shortcake rounds.
Step 8: Place shortcake rounds on a baking sheet, brush with a bit of heavy cream, and bake for 12-15 minutes, or until golden brown.
Step 9: Let shortcakes cool slightly on a wire rack.
Step 10: To serve, split each shortcake in half, and layer with macerated strawberries and a dollop of whipped cream. Top with the other half of the shortcake and finish with more whipped cream and strawberries.

Equipment and Tools

  • Mixing bowls
  • Pastry cutter or two knives
  • Measuring cups and spoons
  • Baking sheet
  • Biscuit cutter
  • Wire rack

Preparation

Gather all your ingredients and equipment before starting the recipe. Hull and slice the strawberries, and chill the butter in the freezer for a few minutes if it’s not already cold. Preheat the oven, and arrange the baking sheet with parchment paper if desired.

Cooking Process

Once the oven is preheated, combine the dry ingredients and cut in the butter until the consistency is correct. Add the heavy cream and vanilla, knead, and cut out the shortcakes. Bake for 12-15 minutes or until golden brown. Meanwhile, let the strawberries macerate. When shortcakes are done, assemble them with strawberries and whipped cream.

Tips and Tricks

For extra flavor, add a little zest from an orange or lemon to the dough.
If the dough is too sticky, add more flour, one tablespoon at a time.
You can use a drinking glass if you don’t have a biscuit cutter.
