Ingredients
- 1kg Beef fillet
- 500g Chestnut mushrooms, chopped
- 1 Large onion
- 4 slices of Prosciutto
- English mustard for brushing
- 500g Puff pastry
- 2 Yolks from egg
- A little flour
- 1 sprig of fresh thyme
- Olive oil
Instructions
Step 1: Wrap the fillet in a cling wrap and chill for 15 minutes.
Step 2: In a processor, add mushrooms and onions and blend until you have a puree.
Step 3: Heat some olive oil in a pan and fry the puree for about 10 minutes to remove all the excess liquid.
